MURCIAN CALDERO

Murcian caldero originated on the fishing boats of the Mar Menor, a saltwater lagoon unique in Europe. There, the sailors used fish of lesser commercial value —small fish— to prepare a rich broth in a cast-iron pot:

“THE CALDERO”, which gives the dish its name.

The caldero is not served like any ordinary rice dish. It has its own ritual:

First, the rice, cooked in a deeply concentrated stock, tinged red by the ñora peppers.

Accompanied by the fish (sea bream), served separately.

Both are usually served with aioli, which adds a creamy and potent contrast
